Q: Can this be in a square?

If you don't attach the bottom, it could probably be bent into a square. But it would not be very stable without the bottom attached, and I would not recommend using it that way.

Q: is this playpen's bars small enough that hamsters or gerbils can play in it?

All species of hamsters, as well as gerbils, can get through anything larger than 1/2". Dwarf hamsters can and will squeeze through 1/2". For smaller pets I'd recommend a cage like the Midwest Small Animal playpen that has 1 cm spacing -safe for even small Roborovski hamsters. With very close supervision, a large Syrian would be okay but it is very possible for them to get through.
