Q: How spicy hot is this on a scale of 1 to 10?

I have been consuming Tom Yum pastes for decades and this brand is by far the worst. As far as the heat factor, its not considerably spicy hot, just plain awful.

320 mg sodium per 1 Tbsp serving.

Q: Should this be refrigerated after opening?

Yep! (PS This comes in one large pouch package that can be a little tricky to get back into the can and into the fridge without making a mess)

Q: How much soup base does this make, volume, not "servings"??

I don't know for sure, but I would imagine quite a lot. In a good-sized pot of soup, at least 3 to 4 quarts... I used only a few tablespoons of it. It is very spicy.
